Ingredients
- 1 large bunch arugula
- 2 heirloom tomatoes, cut into wedges
- 1 large cucumber, sliced into very thin rounds
- 1 small red onion, sliced into very thin rings (optional)
- ¾ cups (6 oz.) crumbled feta cheese
- 1 cup slivered almonds
- Vinaigrette salad dressing
- Salt and freshly ground black pepper, to taste
Instructions
In a large bowl toss arugula, tomato, cucumber, onion slices and feta cheese. Drizzle with dressing; season with salt and pepper. Top with slivered almonds before serving.
