Ingredients
1 potato1 small onion, chopped
½ cup chopped fresh spinach
4 eggs, beaten
2 tomatoes
Salt and pepper to taste
¼ cup shredded cheese
Instructions
- Bring a small pot of water to a boil. Add the potato and cook until tender but still firm, about 12-15 minutes. Drain, cool, and chop.
- Add a small amount of oil to a skillet and heat to medium high. Add the onions, and cook until soft. Add spinach and cook until wilted, about 2 minutes.
- Reduce heat to medium and pour in the eggs. Stir in the potatoes and tomatoes, and season with salt and pepper. Cook, stirring occasionally, until eggs have set.
- Sprinkle with cheese. Enjoy!
